Sconnie Foods Visits UW-Eau Claire

Tracy Lundberg, the president of Sconnie Foods, visited the University of Wisconsin-Eau Claire's Intro to Entrepreneurship class last Friday to share her entrepreneurial story. Founded in 2011, Sconnie Foods specializes in producing food products that cater to unmet customer needs. Their first product, which won the company a grand prize in the 2012 "Idea Challenge" for its innovation, is a squeezable sauerkraut. While visiting UW-Eau Claire, Lundberg discussed patents and intellectual property, the challenge of getting a new product "out there" in the market, as well as the process of working with co-packers and distributors to deliver a quality product. Aside from her regular day job, Lundberg is one of nine student mentors for the Intro to Entrepreneurship class. She is pictured above with her four mentees: Brandy White, Leah Pronschinske, Ben Ingold and Keith Sampica.
